Fumé Blanc

White Wine / 13% ABV / Dry

Inspired to create a unique Sauvignon Blanc, we matured the wine in French oak barrels for 19 months to obtain an irresistible Fume that can be matured in bottles for another 5-10 years to strengthen its bouquet. Aromas of white peppercorn and sweet peppers gently waltz on notes of chili and Mediterranean spices. The aftertaste lingers, with a zesty acidity. Over time, Fume Blanc undergoes a metamorphosis, as its bouquet is finished by nuances of exotic fruit. Castel Mimi's Fume Blanc is produced in a limited edition – only 1,500 bottles.
