MERLOT RESERVE 2012 RED DRY WINE

Its dark ruby color offers a new perspective to the senses with a complex aroma of plums and spices. The unique blueberries and chocolate taste attests the oenologist’s craftsmanship in carrying out an exclusive product. Maturation: min. 36 month in French Oak Barrels

CABERNET SAUVIGNON RESERVE 2012 RED DRY WINE

The flagman of Castel Mimi Winery, produced in Limited Edition. It starts explosively with velvety flavors of grapes, cherries and sour cherries. Towards the end, the wine sparkles with an intense taste of oak and pepper. Sweet tannins carefully shaped by oenologist appear in a unique texture along with the fruitful acidity. AnimAliens series features young unoaked wines with fresh and persistent characters. Bright wines that express the vivacious and generous character of the Moldovan land. The label of each wine displays the drawing of an animal that belongs to local legends and history, reinterpreted in a contemporary key.
The colorful symbols describe wine bouquets, recall patterns from precious traditional Moldovan carpets, and pay tribute to specific locations, beliefs or historical events.

FETEASCA ALBĂ & MUSCAT DRY WHITE 2017

A refined dry wine that embraces the elegant exotic aromas of Muscat grapes and the pronounced freshness of Feteasca Alba variety. An attractive blend that will win your heart with notes of acacia flowers, gooseberries and pomelo.
We recommend to serve this wine with white meat, fish and slightly spicy food.

SYMBOL INTERPRETATION:
The Owl is a frequent guest at Castel Mimi and is represented on the Winery’s Coat of Arms. In winter time this graceful bird protects our vineyards by hunting on small rodents that otherwise could seriously damage the vine stocks. The symbol of the owl expresses freedom, wisdom, and loyalty.


PINOT GRIS & CHARDONNAY DRY WHITE 2017

A full-bodied white blend made of some of the most notorious varieties. Its golden color is paired with a strong bouquet of pear, quince, and passion fruit, with a revealing lasting aftertaste of citrus fruits and green apples.
We recommend to serve this wine with salmon, chicken, pasta in a creamy sauce, and cheese-based salads.

SYMBOL INTERPRETATION:
The Ram since old times is considered a totem animal of the carpathian-danubic region. The symbol of the Ram can be frequently spotted on traditional carpets, towels or clothing, and has deep roots in the imaginary system of our ancestors, for whom growing ship was one of the main activities. The Ram is a symbol of force and virility.


CABERNET SAUVIGNON DRY ROSE 2017

An elegant wine that features a combination between floral notes and strawberry flavors, underlined by a beautiful color of antique rose. A rich taste with an invigorating acidity, that hides lite sweetness. The young character brings in the aftertaste a sensation of barberries and cornelian cherry.
We recommend to serve this wine with grilled seafood, crayfish, and bruschetta topped with pâté.

SYMBOL INTERPRETATION:
The Rooster has his life govern by the eternal opposition between Day and Night. With its crow it wins over the dark spirits while bringing the light back to the sky. In fact the color of Rosé reminds the sunrise in the first hours of the morning.


PINOT NOIR DRY RED 2017

A wine that is all about grace. The elegant red color unveils a bouquet of raspberries, currant, caramel, and smooth notes of spices.

SYMBOL INTERPRETATION:
The Bison is considered a sacred animal by the Moldovan tradition. It is a symbol of fertility as it appears in many agricultural rituals throughout the history, and according to the Bible it witnessed the birth of Messiah.


SAPERAVI DRY RED 2017

A strong wine that represents the symbiosis between the Georgian charm and the inexhaustible energy of Moldovan terroir. Its intense ruby color anticipates easy notes of dried plums and spices, while the fine texture expresses the vivid and generous character of fruitful Moldovan land.
We recommend to serve this wine with duck, beef, mushrooms, grilled tuna or cheese such as comté or emmental.

SYMBOL INTERPRETATION:
The Bison has a special place among national heraldic symbols, being the coat of arms of the historical Moldovan flag. This symbol reflects dignity, sacrifice and patriotism.


PINOT NOIR, SAPERAVI & RARA NEAGRA DRY RED 2017

A tender wine, born from the fusion of three red varieties, that became synonymous with legendary. The intense ruby color of the wine predicts nice juicy flavors of mulberries, blackberries, and soar cherry, beautifully outlined by spicy tannins.
We recommend to serve this wine with venison, red meat: grilled or medium raw, well-seasoned.

The Bison, far back in the past, was often haunted by kings for their fur, tasty meat and their corns. These were used as vessels for wine drinking. For this reason, the bison is seen today as a symbol of nobility and wealth.

ICE WINE INDIGENOUS 2018 WHITE SWEET WINE

Ice Wine made from a wild indigenous variety, discovered in the old vineyards of Castel Mimi. The vines don’t require spraying or special care. Frozen at -6°C ... -10°C, the grapes produced a brilliant golden wine that unveils flavors of exotic fruits, like those of mango, passion fruit and melon. The aftertaste is refreshing and long lasting.
Food pairings: mature cheeses, ice creams, and desserts with exotic fruits. Alcohol: 9.0 % Residual Sugar Level: 220g/l
